Salty and savory notes on the nose carry over to the crunchy, dry palate. Brisk acidity and aggressive bubbles frame the mouthfeel, with a savory bouillon note marking the medium finish. It’s got too much gusto to be an aperitif, but would pair well with sushi. Drink now–2021.
